A few weeks ago, Travis and I stumbled onto a recipe for cinnamon roll pancakes. I have a major infatuation with all cinnamon-flavored desserts, so we spent a Sunday morning trying them out and OH MY GOODNESS!!
I was so distracted by the ooey gooey deliciousness that I only managed to snap this one photo before digging in (oops!)
Let me start by saying that these are WAY too sweet for breakfast. This recipe is perfect, but I couldn’t finish an entire pancake so early in the morning. Still, I highly recommend that you try it for dessert this week.
The pancakes themselves are light and fluffy, and the cinnamon “filling” has the perfect sticky consistency of a Cinnabon cinnamon roll. But these pancakes don’t stop there: of course they’re topped with an out-of-this-world cream cheese frosting. (See what I mean? Not so much a breakfast food…)
