Cinnamon Roll Pancakes

A few weeks ago, Travis and I stumbled onto a recipe for cinnamon roll pancakes. I have a major infatuation with all cinnamon-flavored desserts, so we spent a Sunday morning trying them out and OH MY GOODNESS!!

I was so distracted by the ooey gooey deliciousness that I only managed to snap this one photo before digging in (oops!)

Let me start by saying that these are WAY too sweet for breakfast. This recipe is perfect, but I couldn’t finish an entire pancake so early in the morning. Still, I highly recommend that you try it for dessert this week.

The pancakes themselves are light and fluffy, and the cinnamon “filling” has the perfect sticky consistency of a Cinnabon cinnamon roll. But these pancakes don’t stop there: of course they’re topped with an out-of-this-world cream cheese frosting. (See what I mean? Not so much a breakfast food…)

Let’s Talk About Kale

I’ve taken a new approach to eating lately.  Over the years, I’ve focused a lot more on caloric intake than the nutritional value of the foods that I consume.  And although counting calories definitely makes a difference in my weight, I always end up feeling hungry and end up sabotaging my “diet” altogether.  So, lately I’ve decided to do a 180.

In an effort to feel healthy and balanced, I’m choosing to pay more attention to the food I eat and have stopped counting calories entirely.  One of the foods that I’m trying to incorporate into my daily meals is kale.


Have you tried it?  It’s FULL of amazing vitamins, folic acid, fiber, you name it.  Buuuut it’s not the BEST tasting veggie, in my humble opinion.  For the past week or so, Travis and I have been hiding it in berry smoothies (which totally works and is a great way to start the day!)

But I’d love to find some other creative ways to prepare it…

My friend mixes it into her salads.  I’ve tried kale chips, which apparently you can make at home.  And obviously we could steam it (though that seems a little… meh.)  Got any advice for me?

Have a Sweet Weekend

Happy Friday, lovely readers!  This week has been such a whirlwind with our move, but I’m so happy to officially be in our new place (even though it’s full of boxes and looks a little bit like a tornado hit :)  This weekend promises to be just as busy— I’m driving up to Sonoma to do hair & makeup for a wedding, then Trav and I are spending our Sunday furniture shopping, woo!

Have a Cheerful Weekend (Go, Giants!)

Happy Friday!  What are you up to?  Travis and I are starting our move!  I can’t believe it’s really happening— it all fell into place so quickly.  We’re super excited to have more space and hopefully settle into this new apartment long-term.  (This is our FIFTH apartment in FOUR years… too much moving!)

My family is coming up to the city to help, and we’re also going to a Giants-Dodgers game while they’re visiting.  It’s going to be a whirlwind!  (I hope we have time to watch the start of the Olympics!)
