I’m a total sucker for those cute little individual-sized cakes that you sometimes see at weddings or events. (I mean, who doesn’t want their own personal cake?!) So when I came across these mini-angel food pans in a restaurant supply store, I just had to snatch some up!
We had some friends over on Saturday night and I used the opportunity to bust my new pans out. The result was so easy and tasty, I just had to share with you!
I started with Ghirardelli brownie mix because it doesn’t get much easier or more delicious than that. After I had the batter, I added 2 teaspoons of orange zest. Then, I baked the mini cakes at 325 degrees for 18-20 minutes. And look how cute they were when they came out!

I decided to incorporate a sweet surprise in the middle hole, so I made a go-to topping of mine by mixing marshmallow creme with equal parts cream cheese. (It’s a tangy, sweet combo that tastes good on just about anything.) I used an icing bag to fill the little holes.

Then, I frosted the top and adorned each cake with edible pearls.

These were such a hit and way too easy to make.
